Super Sassy Stir Fry
Oh god, I made the most awesome dinner. A grade above my normally sassy stir fry, it truly is the sassiest of sassy.
Normally, sassy stir fry is made with whatever vegetables are in the house (sauteed) over brown rice. However, I didn't have that many vegetables in the house tonight, and the creativity paid off. In this beautious mixture is one onion chopped in big pieces, orange cauliflower chopped up in big chunks too, one can of red kidney beans, one small can of corn, a bunch of kale, and (the best part) raisins and roasted almonds.
Whenever making stir fry, start with the onions by satueeing them in garlic and oil. Then add the veggies, one at a time, in the order of their hardness. In this case, cauliflower, red beans, corn, kale (nuts and raisins were considered condiments and therefore not needed to simmer-- though they added a heck of a lot of flavor!)
I realize that I said I didn't have many veggies in the house but somehow came up with an entirely vegetarian meal. A bunch of kale and cauliflower doesn't seem like a lot, but lordy did it work! Did I mention that this was bubbling over Kasha instead of rice this time? I'm extra fancy.
